Chocolate Chip Carrot cake

As with all things great, they were (mostly) born out of necessity. Due to an overwhelming amount of carrots, courtesy of the 'Asda Smart Price' concept, I decided to make a carrot cake- almost half-heartedly and you'll understand when you see the pic.


Walnuts were expensive so I substituted the walnuts with a handful of chocolate chips. It was late when i made the cake, so i decided against making the cream cheese icing.
I've tried this recipe before, and its safe to say i'd make it again, its easy and yummy. even with the alterations i made, i'd still make it again, especially if i'd need a quick and easy dessert.

ingredients:
butter, for greasing
125g self raising flour
pinch of salt
1 tsp cinnamon
125g soft brown sugar
2 eggs
100mls sunflower oil
125g carrot, peeled and finely grated
25g dessicated coconut
25g walnuts, chopped

method:

  1. preheat the oven to 180C/ gas mark 4. lightly grease and line an 8inch cake tin.
  2. sift the flour, salt and ground cinnamon into a large bowl and stir in the brown sugar. add the eggs and oil and mix well.
  3. stir in the grated carrot, coconut and walnuts.
  4. our in the mixture into the preheated oven and bake for 20-25 minutes, of until set.
  5. leave to cool in the tin. once cool, turn out the cake and cut into 12 bars.
