Chocolate Chip Carrot cake
As with all things great, they were (mostly) born out of necessity. Due to an overwhelming amount of carrots, courtesy of the 'Asda Smart Price' concept, I decided to make a carrot cake- almost half-heartedly and you'll understand when you see the pic.
Walnuts were expensive so I substituted the walnuts with a handful of chocolate chips. It was late when i made the cake, so i decided against making the cream cheese icing.
I've tried this recipe before, and its safe to say i'd make it again, its easy and yummy. even with the alterations i made, i'd still make it again, especially if i'd need a quick and easy dessert.
ingredients:
butter, for greasing
125g self raising flour
pinch of salt
1 tsp cinnamon
125g soft brown sugar
2 eggs
100mls sunflower oil
125g carrot, peeled and finely grated
25g dessicated coconut
25g walnuts, chopped
method:
- preheat the oven to 180C/ gas mark 4. lightly grease and line an 8inch cake tin.
- sift the flour, salt and ground cinnamon into a large bowl and stir in the brown sugar. add the eggs and oil and mix well.
- stir in the grated carrot, coconut and walnuts.
- our in the mixture into the preheated oven and bake for 20-25 minutes, of until set.
- leave to cool in the tin. once cool, turn out the cake and cut into 12 bars.
